Which herbs keep going in winter?

Parsley, oregano, rosemary, sage, thyme, sorrel and winter savory should be fine, and bay with a little shelter. Mint, monarda, tarragon and chives die down, though in the case of chives you can often find a few useable shoots near the base. Lemon verbena loses its leaves and pineapple sage gets cut back by frost, but both usually come back in the spring — ditto lemon balm and maybe lemon grass. But you’ll have to wait before replanting tender annuals like basil and coriander.
